Eating Through March Day 1

Crock Pot Ham
Photobucket

This is a family favorite, makes some delicious leftovers and is so easy you may even forgot its cooking!

  • 4 cups of brown sugar
  • 1 3lb picnic or smoked ham
  1. Place 2 cups brown sugar on the bottom of the crock pot.
  2. Insert ham into crock pot -you may need to cut the ham up a bit to make it fit
  3. Rub remain brown sugar over ham
  4. Cover - if your ham is sticking out and the normal cover wont work you can use tin foil to cover it or sometimes I use a deep 13x9 dish over top.
  5. Cook on high for 8 hrs or until ham falls apart with fork.

I usually serve this with broccoli and Mashed Potatoes with gravy or Mac 'n' cheese.

Try cutting the left overs up into small pieces and adding it to cheesy Au gratin potatoes or to cream based soup!

Happy Cooking!

I may get Swine flu but I love Pork!

I made the most amazing Pork Tenderloin this weekend. It was so good my mouth still water's for it!I got the recipe from April, who is always giving me ideas for new and wonderful things to try. I couldn't find the balsamic and roasted onion marinade as suggested so I used Ken's creamy balsamic dressing insead and added a scoop of minced onions and some garlic powder. When I made the gravy I just added a packet of McCormick's Brown Gravy to 2-3 cups of the liquid in the crock pot. It was to die for. I actually just had leftovers and I licked my plate clean! It makes a big portion so there are lots of left overs to do what you wish with. I gave ours to my parents they're going to have it for dinner tonight. I can't wait to make this again! Thanks so much April!

I'll post more about our weekend as soon as I get the pictures! We had a fabulous one and the weather couldn't have better!
